Introduction

This has both a sweet and spicy taste to it, and is easy to make. One could easily substitute the butter beans for black beans or pinto beans. If you don't like garlic as much as me you can cut back. Ingredients

    - 14oz. Jennio O Lean Smoked Turkey sausage, cut into 1/4 inch thick slices
    - 1 can of butter beans packed in water, drained.
    - 1 bell pepper, seeded and sliced thin. (I prefer yellow, red or orange, myself)
    - 2 tbsp chopped onion
    - 1 tbsp chopped garlic
    - 2 tbsp teriyaki sauce
    - 2 tbsp mango salsa

Directions

Makes 4, 1-cup servings. In a nonstick pan spray with nonstick no calorie cooking spray. Combine all ingredients in pan. Heat through over medium heat until peppers and onions are tender, stirring occasionally. Can serve by itself or over brown rice. If you serve over rice, add 150 calories for 3/4 cups of cooked brown rice.

    Good
It was very tasty but seemed a bit dry to us. Perhaps more salsa added in right before serving would help. - 4/13/11
