Ingredients

    1 cup fresh mushrooms, sliced
    1 cup zucchini, sliced
    1 sweet onion, sliced thin
    1/2 tsp. ground thyme
    1/2 tsp. paprika
    1 tsp. minced garlic
    1 tbsp. butter
    1 roma tomato, chopped

Directions

Melt butter.
Add all ingredients, except for the tomato; saute until tender.
Add tomato and cook for 1 minute.
Serve plain or sprinkle with parmesan cheese.

    This is my favorite side dish. Used olive oil and doubled the tomatos. Had some fresh basil so added it to. I used chicken stock because the pan seems dry. - 1/6/16

    This is quick when using presliced mushrooms. I substituted olive oil for the butter and used more garlic (DH is Italian & loves garlic) - 7/6/10

    I make something similar and add it to a serving of 92% lean ground beef and serve it over brown rice - a very satisfying and filling dinner. - 10/9/08
