I like this mix with a little of low-fat cheese.
I do something similar to this except I use yellow squash, zucchini, celery, onion and mushrooms, thyme, salt and pepper. Cover for 10 minutes, add quartered tomatoes and parmesan, cover again for two minutes until the cheese melts. People who hate squash and zucchini love this recipe!
