Ingredients

3-4 large yukon gold potatoes
1T butter
2T dried (or fresh) parsely
2T half and half
salt and pepper to taste
Directions
Chop potatoes into uniform large dice. Boil in salted water until tender. Drain. Add potatoes back to pan. Over heat, add butter, parsley and cream to potaoes. Mix well. serve hot.
