Ingredients

    1 lb boneless pork, cut into 1/2 inch cubes
    2 15 oz cans black beans, drained (recipe calls for 2 16 oz cans black beans but I used 2 15 oz no salt added black beans)
    1 red or yellow bell pepper, chopped
    1medium tomato, peeled, seeded and chopped
    1 small red onion, thinly sliced
    1 clove garlic, crushed
    1/2 tsp ground cumin
    2 tsp chili powder
    1/2 tsp salt
    1 8 oz can tomato sauce

    Opt:
    1/2 c plain lowfat yogurt or sour cream
    2 T chopped cilantro leaves

Directions

In a slow cooker, stir together pork, beans, bell pepper, tomato, onion, garlic, cumin, chili powder, salt and tomato sauce. Cover and cook on LOW 8-9 hours. Spoon into individual bowls; top with yogurt or sour cream and cilantro.
