Ingredients



    * Onions, raw, .5 small
    * Garlic, 2 clove
    * Spinach, frozen, 1 package (10 oz)
    * Egg substitute, liquid (Egg Beaters), .5 cup
    * Egg white, 3 serving
    * Milk, canned, evaporated, .33 cup
    * Mozzarella Cheese, part skim milk, 2 oz
    Salsa (homemade or canned) Calories not in nutritional info

Directions

Preheat oven to 350. Using cooking spray, cook onion and garlic, about 3 minutes. Stir in spinach (thawed and drained well). Reduce heat to low. In a large bowl, beat egg beaters, egg whites and milk until light yellow and frothy. Pour egg mixture over spinach. Cook 5-7 minutes until egg mixture is cooked on bottom and almost set on top. Sprinkle with cheese. Bake in oven until eggs are set and cheese has melted, 5-10 minutes. Cut in half, serve with Salsa.
