Ingredients

1/2 c water
1/3 c couscous
1/2 cup leeks
3 c broccoli
2 c egg substitute
1.5 oz cheese
Directions
In a saucepan bring 1/2 c water to a boil. Stir in couscous and remove from heat. Cover and let sit for 5 mins. Fluff with a fork.
Warm oven-ready pan on top of stove.
Spray pan with cooking spray.
Sautee leeks and broccoli, seasoning with garlic, black pepper, and salt to taste.
Wisk egg substitute with salt, pepper and garlic powder to taste.
Add couscous to pan.
Pour into pan and let cook over medium-low heat for about 10 minutes or until bottom is set.
Top with cheese and bake in the over at 350 degrees for 10 minutes or until set.
Yields 6 servings.
