Ingredients

    6 - 6oz skinless salmon filets
    1 lemon
    5 oz semisoft cheese w/garlic and herbs
    salt
    1 cup soft bread crumbs
    1/3 shredded parmesan
    1/4 cup melted butter
    2 T pine nuts, toasted

Directions

Heat oven to 450. Rinse fish; pat dry. Shred lemon peel to make 2 t, combine with cheese. Cut pocket into fish, stuff with cheese. Salt fish and place in shallow baking pan. Combein breadcrumbs, parmesan, butter and pine nuts; sprinkle over fillets, pressing lightly. Bake, uncovered about 15 minutes. Serve with lemon wedges.

    Very Good
    I couldn't find the cream cheese with garlic and herbs so I got onion and chives. It was a little strong but it was a good dish. I will make this again and will probably play around with different cream cheeses and spices. - 7/28/15
