Ingredients
* Chicken Breast, no skin, 3 breast, bone and skin removed
* Chicken andouille sausage, one pack
* *Peppers, sweet, red, fresh, 2 cup, chopped
* Onions, raw, 1.5 cup, chopped
* Garlic, 3 cloves
* Butter, unsalted, 3 tbsp
* *Flour, white, .25 cup
* *Del Monte Petite Cut Diced Tomatoes, 2 cup
* Chicken Broth, 2 cup (8 fl oz)
* Brown Rice, long grain, 3 cup
* Chopped green onions for garnish
Directions
Makes about 12 one cup servings.
Whisk butter and flour together in heated pot to make roux. Add chopped vegetables and garlic. Cook till translucent. Add chopped sausage and chicken. Cook, stirring, until chicken is cooked through. Add chicken broth and diced tomatoes. Stir all ingredients together, bring to a boil. I cook my brown rice separately because it takes 45 minutes but if you had quick cook type rice, you'd add it here. After everything boils, simmer for a while. Serve with chopped green onions for garnish and a thin slice of crusty bread. Cajun yum!
