Introduction

An easy way to make a homemade spicy tomato sauce. You can substitute chicken or another source of protein for a more lean version. Ingredients

    1/3 c. chopped onion
    3 cloves garlic (1.5 T)
    2T EVOO
    1tsp cumin powder
    1T crushed dried red pepper
    1tsp black pepper
    28oz can crushed tomatoes
    1T fresh oregano leaves, off stem, chopped
    1.25lb shrimp (about 6-7 large per serving)
    salt & pepper to taste (not too much salt since using canned tomato)
    6T grated parmesan cheese

Directions

Place EVOO, onion, garlic, cumin, red pepper, black pepper in pan and saute until onions are transluscent. Then add 28oz can of crushed tomatoes (or diced tomatoes if you like a chunkier sauce). Bring to a simmering boil. Season with salt and little more pepper, if needed. Place shrimp and oregano in sauce. Cook until shrimp are done (about 5 minutes). Divide into 6 servings and top each serving with 1T grated parmesan cheese, if wanted. Goes great with spinach or another green veggie.
