Introduction
Nice and healthy mixture of chicken and vegetables that goes really good over a bed of brown rice.I also added 1 oz of lemon juice to mine, which kicked it up a notch!!

Ingredients

1 1/2 lbs of Chicken Breast, cut up into bite size pieces
6 3/4 Cups of Zucchini, cut up
2 1/2 Cups of Mushrooms, sliced
2 Cups of Fresh Tomato Puree (approx. 3 med. tomatoes)
2 Tbsp of Olive Oil
6 Cloves of Garlic, crushed
2 Tsp of Morton Lite Salt
1/4 Tsp of Ground Black Pepper
1 1/2 Tsp of Basil, dried
1 1/4 Tsp of Thyme, ground
Directions
Heat your olive oil in a large pot. Place and cook chicken pieces in pot, along with all the spices. Then pour the tomato puree into your cooked chicken mixture and mix well. Then add your zucchini and mushrooms into the mixture. Bring your chicken/vegetable mixture to a boil, reduce heat to a simmer and simmer for 25 minutes.
