Introduction

I make this in my crock pot for quick and easy "tv dinner" lunches.

You can lower the sodium yourself if that is a concern. I use bouillon but its not necessary as many use their own flavorings.

Number of Servings: 6

Ingredients

    4 frozen chicken breasts at approximately 140 calories each.

    1 cup corn

    2 small cans green chillies

    1 can or 1.5 cups black beans, juice and all (you can use any beans here by the way, as long as they are close in calories)

    1 can stewed tomatoes or 2 cups worth, juice and all

    Pimento (which is red bell pepper) 1 can or 1 cup. I use this in place of tomato sauce but that is also acceptable.

    2 chicken bouillon cubes. Less to your taste but I prefer to overestimate.

    1 cup of water.

    1tbsp paprika (smoked is exceptional in this case)

    1tbsp Cumin seed

    2 tbsp cilantro (more or less to your taste)

Directions

Place the chicken in the bottom of the crockpot then simply add in the other ingredients.

Cook for 7-9 hours on low or 4-5 hours on high.

Lemon/lime juice is also a yummy addition to this recipe. Romano cheese is my personal favorite on top.

Makes 6 nice size servings.
