Introduction

Ingredients

    1 package jumbo pasta shells
    4 cups nonfat cottage cheese
    8 ounces grated mozarella cheese
    1/2 C. parmesan cheese
    2 eggs
    1 tbsp parsley
    1/2 tsp salt
    1/4 tsp pepper
    1/8 tsp nutmeg
    30 ounces spaghetti sauce (one can - we like Hunt's brand)

Directions

Makes about 8 servings - depending on who's eating. We have 4 kids at most meals along with adults and usually have a few leftovers for lunch!

Boil pasta according to package directions, drain. Rinse with cold water and arrange in a single layer to fill. Meanwhile, mix together cheeses, eggs, parsley, salt, pepper, and nutmeg. Fill cooked shells with cheese mixture. Cover bottom of 9X12 pan with some of the spaghetti sauce. Arrange filled shells in single layer in pan. Pour remaining sauce over shells & bake @ 350 farenheit for 30 min or until hot. Sprinkle with additional parmesan if desired (not included in calorie info).
