Introduction

An awesome summer salad that makes a great Vegetarian meal all by itself! An awesome summer salad that makes a great Vegetarian meal all by itself!
Number of Servings: 4

Ingredients

    1 cup cooked whole wheat couscous (1/3 cup dry)
    1 cup diced tomatoes
    1 cup diced cucumber
    1 cup chopped green onions
    1 cup chopped fresh parsley
    1 cup cooked lentils or chickpeas (garbanzo beans)
    2 cloves crushed garlic
    1-2 Tbsp chopped fresh mint
    2 Tbsp Olive or Canola Oil
    3 Tbsp Balsamic Vinegar
    1/4 tsp Black Pepper

Directions

Cook and cool couscous as per package directions. I like to cook the garlic along with the couscous - it takes away some of the harshness of raw garlic.
Once couscous is cooled, mix all ingredients together in a large salad bowl.
Chill in the refrigerator for 15-30 minutes to allow flavors to blend.
