Ingredients

    3 whole chicken breasts
    1 large onion
    1 head celery
    10oz bag match stick carrots
    16 oz spinach
    2 11.5 oz cans V-8
    2 15.5 can black beans
    16 oz bag pearled barley
    48 oz container Swanson Natural Goodness Chicken Broth
    48 oz water

Directions

In large stock pot, pour broth and water. Chop onion and celery - add to pot. Add chicken and simmer until tender. Remove chicken and cut into bite size pcs. - return to pan. Add 2 cans V-8, black beans, carrots and spinach. Simmer for about 10 minutes. Add barley and cook over low heat approx. 45 minutes - until barley is tender. Season with salt and pepper if desired. Can add more both if wanted but I like it thick.
