Looking for a way to get more omega-3 and calcium in your diet? My Grama was a great cook, and my grandfather caught a lot of salmon - this was usually made with salmon she'd canned herself. Ingredients

1 - 14.75 oz can Bumble Bee Wild Alaska Pink Salmon, drained & flaked
2 large eggs slightly beaten
1 Tbsp chopped fresh parsley
1 Tbsp minced dried onion
2 Tbsp fresh lemon juice
1 tsp prepared mustard
14 saltine crackers, crushed
1 cup 2% milk
1 Tbsp butter, melted
Black pepper or dash of Tabasco
Directions
Preheat oven to 350. Spray a small loaf pan with non-stick spray.
Combine ingredients in order, pat into baking dish, bake 45 to 50 minutes (or until center is 'set'). Cool 10 minutes - loosen and place on serving plate with spatula.
NOTE: The bones in canned salmon are perfectly edible and actually give a nice crunch. They also contain a lot of calcium.
