Ingredients

1 1/4 c Whole Wheat Flour
1 c Barley Flour*
1 t Baking Powder
1 t aking Soda
1/2 t salt
1 t cinnamon, ground
2 large or 3 small bananas, mashed
1/2 c applesauce, unsweetened
1/3 c sugar in the raw
1 T ground flax seed meal**
3 T Water
1/2 c Raisins
2 t Vanilla Extract
3/4 c Silk, Very Vanilla Soymilk,
1 T Lemon juice
Directions
Preheat oven to 350°.
Mix flours, baking powder, baking soda and cinnamon in a large bowl.
In another bowl mash bananas and mix in remaining ingredients.
Pou the wet ingredients into the dry and gently mix just until combined.
Pour into 9" X 5" loaf pan and bake for 70 minutes until a toothpick inserted in the center comes out clean.
Makes 15 slices.
*You can use all whole wheat flour if you don't have barley flour, but it does make a denser, drier loaf of bread.
**Or other egg replacement equal to one egg
