Introduction
I changed this recipe to eliminate most of the oil/fat. I don't notice a change in taste by getting rid of the extra olive oil and butter. My kids love it! Ingredients

1 Tbs olive oil
1 lb chicken breast cubed
3 garlic cloves
salt and pepper
1 lb broccolii florets
2 2/3 C pasta dry
6 oz roasted red peppers
generous 1 C of chicken boullion
red pepper flakes to taste
salt and pepper
Directions
Makes 4 servings.
Steam broccoli. Cook pasta. Cook chicken breast in oven for 30 min at 350.
Cube up chicken. Chop up peppers. Heat olive oil in large pan. Add minced garlic and cook just until it changes color - 1-2 min. Add chicken, pasta, broccoli and peppers. Add salt and pepper to taste. Add chicken boullion and simmer until most of the liquid has been absorbed.
I add red pepper flakes to my portion for added spice - but not to the kids.
