Introduction

This is a one-pot vegetarian meal that is very satisfying and gives you a lot of fiber and vegetables,as well as carbs for energy and MAJOR FLAVOR. I make a pot and then eat half for lunch and the other half for dinner. It is very delicious! Ingredients

    One packet Physician's Weight Loss Clinic Fettucini
    1.5 cups water
    2 tsps red miso paste
    1/2 cup fresh salsa
    1 can Bush's Best (or similar) Great Northern Beans (drained)
    1 medium organic baby zuchinni, sliced
    1/2 cup grated carrots
    4 cups of organic raw spinach
    1 tbsp turmeric

Directions

Open fettucini packet and put dry mix in medium to large pot, along with 1.5 cups water. Stir well and turn heat on to medium-high. Once a low boil is achieved, turn heat down until a perfect simmer point is found. Set timer for 6 minutes. While the fettucini is cooking, you are going to add the other ingredients in this order:

zuchinni
carrots
great northern beans
turmeric
red miso paste (mix this in very well; do not let get to rolling boil)
salsa
spinach (should be about a minute or so left at this point. Spinach should just be folded in at the end to retain optimal nutrients)

fold all ingredients in together, and remove from heat. Enjoy a hearty bowlful and save the rest for later. Makes about three to four servings (depending on how hungry you are :-)
