Number of Servings: 10

Ingredients

    1 lb chicken breasts, boneless & skinless
    15 oz can black beans, drained
    2 cups fire roasted salsa (find recipe in this cookbook) or your favorite salsa.
    1/3 cup sundried tomatoes
    2 cloves garlic
    2 tsp dried oregano
    4 tbsp olive oil
    2 tbsp balsamic vinegar
    1 tbsp lime juice
    6 cups spanish rice (cooked) (recipe in this cookbook)

Directions

Cut chicken into bite-sized pieces and place into a bowl. Mix in 2 tbsp olive oil, oregano and lime juice. Let stand for approximately one hour or more if desired.

Saute' tomatoes and garlic in olive oil and vinegar until tender. Add chicken and cook until done. Add salsa and black beans and then simmer 10 minutes.

Serve over spanish rice.

This will yield approximately 10 1-cup servings
