Ingredients

    1- 15.5 oz can blackeye peas, drained & rinsed
    1- 11 oz can white shoepeg corn, drained & rinsed
    1.5 c. chopped green bell pepper
    .5 c. chopped leeks (greens only)
    2-3 roma tomatoes, chopped
    1 small to medium avocado
    .5 c. fresh cilantro, chopped
    .5 c. red wine vinegar
    .33 c. olive oil
    2 tsp minced garlic
    .5 tsp salt
    .5 tsp ground black pepper

Directions

Add dressing ingredients to a jar and shake well to mix:

red wine vinegar
Olive oil
garlic
salt
black pepper

Set aside

In large mixing bowl mix together vegetables:
blackeye peas
shoepeg corn
avocado
tomatoes
green pepper
leeks
cilantro

Shake dressing mixture and pour over veggies, mixing well

Marinate 6-8 hours (or overnight)

Enjoy alone or with tortilla or soy chips!
