Introduction
Made as a side to go with Jerk Pork Casserole. (I think next time I'll combine the whole thing and bake it together, but it works well together.) Made as a side to go with Jerk Pork Casserole. Ingredients

1 bag Valley Fresh Steamers White Shoepeg Corn
1 can Dole Pineapple Tidbits in juice
1/4 c. lime juice
2 tbsp brown sugar
2 tsp. corn starch
1 tsp ground thyme
1 tsp pumpkin pie spice
1 tsp allspice
1 tsp salt
1/2 tsp cayenne pepper
bell pepper to taste
Directions
Mix lime juice, brown sugar, corn starch & spices. Pour into heated skillet, Cook to boiling, stirring constantly. Once thickened, add can of pineapple (undrained). Stir until combined. Add bell pepper & frozen corn. Cook 5-10 minutes on high heat (until corn is hot).
Makes approx 8 1/2 cup servings.
