This is a quick and easy chicken gyro recipe. It's delicious but also easy and fast enough for a weeknight evening. It's also full of veggies, flavor and healthy nutrition. Ingredients

    4 pita bread loafs
    1 can of chicken (10.5 oz)
    1/2 medium onion, chopped
    1/2 medium bell pepper, chopped
    1/4 large cucumber, peeled and chopped
    1/2 can of tomatoes (with juice)
    8 tbsp of tzatziki sauce

Directions

* Combine the chicken, peppers, onions and tomatoes in a skillet over medium heat and saute until the peppers are tender-crisp, the onions are translucent and everything is heated throughout.
* Cut each pita loaf in half.
* Fill each half with 1/8 chicken and veggies mixture.
* Top with the chopped cucumbers and tzatziki sauce.

4 servings of 1 pita loaf each (very filling!)
