Number of Servings: 6

Ingredients

    1 cup whole wheat flour
    2 teaspoons baking powder
    1 teaspoon baking soda
    1/2 cup Splenda
    2 cups Fiber One® cereal
    1 1/2 cups water
    1/2 cup Egg Beaters® 99% egg substitute
    2 tablespoons vinegar
    1 oz raisins
    2 Tbs flaked coconut
    1 cup crushed pineapple in juice

Directions

Preheat oven to 375º. Spin Fiber One in food processor until it resembles course flour. Put cereal in small bowl with Mango drink; set aside. In separate bowl, combine flour, baking powder, baking soda and salt. Set aside. To bowl with Fiber One and water, add vinegar, pineapple, and EggBeaters. Combine. Add dry mixture to wet mixture and stir only until dry ingredients are moisten. Fold in raisins and coconut. Scoop into muffin cups which have been coated with non stick spray. Place pan in the oven and increase heat to 400º. Bake 20-25 minutes or until toothpick inserted in center comes out clean. Cool in pan on wire rack for five minutes; remove from pan to cool completely and cool muffins upside down.
