Introduction

This is my base version for Hot and Sour Soup. You can customize to how you like it. I will sometimes change the type of mushrooms, add tofu, add pickled cabbage...all depending on what I have on hand. This is my base version for Hot and Sour Soup. Ingredients

    4 cups Kitchen Basics Chicken Stock
    2 celery stalks-sliced
    1 can waterchestnuts-drained
    1 can bamboo shoots-drained
    2 c white mushrooms-sliced
    1 c bean sprouts-fresh
    1 T soy sauce
    3 T Rice vinegar
    1/2 t sesame oil
    1 t chili paste
    1 garlic clove

Directions

Put all ingredients into a stockpot. Simmer about 30-45 minutes or until the mushrooms are done. Serve.

I sometimes make a double batch & freeze individual portions for lunches. Also, heat can be adjusted with the chili paste to meet individual preferences. The one I use is from the Asain market and is hotter than the ones from our grocery store, so adjust as needed. Sometimes I will bake wonton chips to dip in it also.
