Ingredients

    Crust:
    1 cup mashed potatoes
    1/4 c skim milk
    1 tsp olive oil
    salt and pepper to taste

    Bake in oven for 10 mins at 350 F. Remove and fill with following mixture:

    3 eggs
    4 egg whites
    1/2 cup milk
    1/4 cup onion diced
    2 slices Larsen ham (bacon style)
    1/4 cup finely grated marble cheese
    1/4 tsp red pepper flakes
    pepper and salt to taste

    Fill potato crust muffin tins evenly with above mixture and bake at 350 for approximately 20 - 25 mins or until cooked through.
