Ingredients

    1 1/2 lbs bonless chicken breast, diced
    1 cup chicken broth
    1 T thyme, 2 T olive oil, 1/2 t salt, 1/4 t pepper
    1 1/2 lbs of potatoes, cubed
    2 medium onions quartered

Directions

Combine all ingredients in a large sprayed baking dish and cover. Bake 30 min @ 350. Remove cover and back 30 min more. Makes 6 servings.
