Introduction

This is a basic recipe for crepes, which can then be combined with many other ingredients for wonderful variety. This is a basic recipe for crepes, which can then be combined with many other ingredients for wonderful variety.
Number of Servings: 14

Ingredients

    2 cups white flour
    1/4 cup unsifted powdered sugar
    4 large eggs
    2 cups vanilla soymilk
    2 tsp vanilla extract
    1-1/2 tbsp unsalted butter
    1/4 tsp salt

Directions

Combine all ingredients in a blender.
Heat a skillet with 1 tbsp of canola oil.
Pour in the batter so that it evenly covers the skillet in a thin layer. When it appears to be firm on one side or golden brown, turn over.
Once golden brown on the other side, remove from heat.
Repeat until the batter is gone.
When the crepes are finished, they should not be too sweet. Now, they may be made sweet when combined with jam, fruit, and/or sugar; or they may be savory when used with things like goat cheese, ham, spinach, etc.
Try it however you like, but don't forget to track it!

    Try this with Nutella and walnuts. Its great! High in calories, but have one... it's definitelly worth it. - 3/6/08
