Ingredients

3/4 cup bran (I used wheat bran)
1/4 cup wheatgerm
1 cup buttermilk
1/4 cup Splenda, brown sugar blend
3/4 cup whole wheat flour
1 tsp. baking soda
1 tsp. salt
1/2 tsp. cinnamon (I used 1 tsp.)
1 egg
1/3 c. melted unsalted butter
2 ripe bananas, mashed
1/2 cup chopped dates
Directions
1. Preheat oven to 350 degrees.
2. Soak bran in the buttermilk for 15 minutes.
3. In medium bowl mix the splenda, flour, baking soda, salt and cinnamon.
4. Stir in the egg, butter, bran/buttermilk mixture, wheatgerm, bananas and dates. Stir until just combined.
5. Pour batter into greased muffin tins. Makes 12.
6. Bake 15-20 minutes, or until toothpick comes out clean.
