Ingredients

    3 cups oatmeal
    1/4 cup Splenda brown sugar
    2 tsp baking powder
    1/4 tsp salt
    2 egg whites
    1 egg
    1 1/4 cup skim milk
    1/4 cup canola oil
    1 tsp vanilla extract
    15 ounce can peaches - drained and chopped
    1 cup blueberries
    1/3 cup walnuts, chopped

Directions

Mix oats, brown sugar, baking powder and salt. Separately whisk together egg whites, egg, milk, canola oil, and vanilla.

Prior to baking mix wet and dry. Let stand 5 minutes, then fold in fruit. Place in greased pan. Top with walnuts.

Bake in greased 11X7 pan at 350 degrees for 35 - 40 minutes, until top is lightly browned and internal temperature is 160.

    This is my all time favorite breakfast. I make it every week, then just reheat a portion in the microwave with 1 Tbsp water. I top with with a little vanilla yogurt. Keeps me full till lunch. - 6/21/14

    We love this recipe - the best baked oatmeal recipe we've found. I use reg. br. sugar, but only use 1/4 c. and is still plenty sweet. If you've never tried baked oatmeal, this recipe is a MUST TRY! ... and if you like baked oatmeal, this one is sure to be a favorite of yours. - 5/24/11
