Introduction

A healthy alternative to my mom's tuna caserole. A healthy alternative to my mom's tuna caserole.
Number of Servings: 3

Ingredients

    4 oz. Barilla Multi-Grain Elbow Pasta
    8 oz. crimini mushrooms
    2 oz. chopped onion
    5 oz. california blend vegetables, chopped
    1 can tuna in water, drained
    2 oz. cheddar cheese, shredded
    1 oz. asiago cheese, shredded
    2 Tbs. reduced fat sour cream
    1/2 tsp. garlic powder
    salt and pepper to taste

Directions

Cook pasta according to package directions.

Saute vegetables using butter flavored cooking spray. Stir in tuna and sour cream. Add 3/4 of the cheese. Mix in pasta. Place in a glass loaf pan. Sprinkle remaining cheese on top. Bake at 350 degrees for 15 - 20 minutes.

Makes 3 servings. For smaller portions, it could make 4 servings.
