Introduction

This is a very filling, high-fiber soup that you throw in the crockpot. I use leftover rotiserie chicken (about 8 to 10 oz) for all my soups just to make it easier. Ingredients

    1 can chickpeas
    1 can chili beans (or lite kidney beans)
    1 10 oz bag frozen mixed vegies (peas, carrots, green beans)
    8 to 10 oz chicken
    2 cups chicken broth--i use low sodium fat/msg free)
    1/2 can tomato paste
    1 can tomatoes
    1/2 c frozen corn
    1/2 c each celery, green peppers, onion--sauteed preferably
    chili powder, taco seasoning, pimento powder, garlic powder as you like

Directions

throw everything in the pot and leave!
generously makes 8 cups of soup
garnish a little low-fat cheese and/or fat free sour cream--but not necessary!
