Ingredients

(1/4) of a Large Cucumber
(6) Fresh Spinach Leaves
(1) Slice of Fat Free American Cheese
(2) tspns of Spicy Brown Mustard
(1-1/2) tbsns of Light Mayo
(2) slices of Whole Grain/12 Grain Bread.
Directions
On one piece of bread, spread your mustard on. Place your cucumbers on the mustard-spreaded bread. Place the piece of cheese on top of the cucumbers. On the other piece of bread, apply the mayo. On top of the may, place the leaves of spinach. Put both pieces of bread together and enjoy a good hearty sandwich for lunch.
Try taking a few extra leaves of spinach and using a couple slices of cucumber and dressing them in a low fat or non fat dressing for an extra healthy lunch.
