Introduction

This is a very filling meal that serves a crowd. You can halve the recipe easily or freeze for later if you are not serving a crowd! Ingredients

    Ingredients:
    Ground beef, lean, 16 oz
    Ground Pork, 16 oz (remove)
    Brown Rice, long grain, 2 cup cooked
    zuchini, 2 grated
    Carrots, raw, 2 cup, grated
    Cabbage, fresh, 2 head, large
    Onions, raw, 1 cup, chopped
    Peppers, sweet, red and green, fresh, 1 cup, chopped
    Garlic, 4 clove
    Tomato products, Hunts Diced Tomatoes w/ Basil, Garlic, and Oregano,2 cans
    Brown Sugar, 1 cup, packed
    Saurkraut, canned, drained, 2 cans
    1 egg

Directions

Place grond beef and pork, onions, garlic, carrots, zuchini, and peppers in skillet and saute' unil browned. Add the cooked rice and heat through. Parboil the cabbage leaves until soft, about 5 minutes and remove from core. Place 1/4 cup meat mixture inside cabbage leaf and roll from base towards outer edge of leaf, tucking in the sides as you go.
Place saurkraut on bottom of large baking dish (I use a roaster pan due to size) top with 1 can tomatoes and 1/2 cup brown sugar.
Place cabbage rolls on op of saurkraut mixture and then top with remaining tomato sauce and brown sugar.
Bake in 350 degree oven for 120 minutes (2 hours) until cabbage rolls are hot, tender, and somewhat carmelized.
I serve with mashed potatoes for a hearty comfort food.
Makes about 30 cabbage rolls, serving size is about 1 and 1/2 cabbage rolls.
