Ingredients

    1 1/4 cup whole wheat flour
    1/4 cup spelt flour
    1/2 tbsp. cinnamon
    2 tsp. baking powder
    1/2 tsp. baking soda
    1/4 tsp. salt

    1 apple, grated
    1 zucchini, grated
    1/2 cup plain non fat greek yogurt
    1/4 cup honey
    1 egg

Directions

Preheat an oven to 350 degrees F and grease an 8x4 of 9x5 loaf pan.

In a large bowl whisk together the flours, baking soda, baking powder, cinnamon, and salt. Set aside.

In a separate bowl whisk together the grated apple, grated zucchini, egg, yogurt, and honey.

Add the wet ingredients to the dry and fold until just combined. Spread the batter in the prepared loaf pan and bake until golden brown, 40-45 minutes.

Yield: 10 slices

    Just what I was looking for!! Actually healthy zucchini bread that is DELICIOUS. I used 1/4 old-fashioned oats (put into a blender to get a powder) instead of spelt flour and only two tablespoons of honey instead of 1/4 cup. MOIST AND WONDERFUL! - 6/11/12

    Easy to make. A great way to use whole grains, veggies and fruit all in one. It's also great because of the use of honey, instead of sugar. I added a bit more cinnamon for flavor. - 7/28/10

    Thank you! I think so too--it's particularly apt for folks who aren't crazy about squash in the first place. It really highlights the natural sweetness and fresh flavor of zucchini.
