Ingredients

    1 1/2 TB virgin olive oil
    1 cup chopped onion
    3 cloves garlic, chopped
    4 cups black beans, canned
    1/2 cup vegetable broth
    2 TB lemon juice
    1 tsp ground cumin

Directions

Heat the oil in a large saucepan. Add the onions and cook, stirring over medium heat until translucent, about 10 minutes. Add the garlic and cook, stirring, until the onions are golden, about 5 to 10 minutes more. Add the beans and bean liquid and bring to a simmer. Mash about 1/4 of the beans with the back of a wooden spoon to thicken the liquid. Add the lemon juice, cumin salt and pepper, simmer over very low heat for 15 minutes.
