Spinach, cooked, 0.5 cup
Plum tomato 1 medium, sliced or diced
Pepper, black, 1 dash
Garlic, .25 tsp
Cumin (ground), .25 tsp
Salt, 1 dash (optional)
La Tortilla Factory, Whole Wheat Low Carb Tortilla, 2 serving
Mozzarella Cheese, part skim milk, 1 oz
Directions
Cook the spinach and tomato in the microwave or on the stove just until the desired consistency. It's your choice. You can also skip the precooking and just use the spinach and tomato straight from the frig. Add the spices and mix well. Salt is optional. You can also add some "hot" spices to this if you wish.
Lay out two tortillas. Divide the spinach/tomato mix in half and spread on each of the tortillas. Sprinkle a half ounce of Mozzarella cheese on top of each. Roll each tortilla and set on a paper plate or microwave safe plate. Microwave for 15-30 seconds.
Yeilds 1 serving

Wrap all ingredients in one tortilla.

Broil in oven with tortillas open until the cheese on the top bubbles or starts to turn brown for a YUMMY alternative to pizza! My 6 y.o. daughter LOVES this version.
