Ingredients

    Brown Rice, 2 cup
    Scallions, raw, .5 cup, chopped
    Beans, black, 1.75 cup (one 15 oz can)
    Pace Chunky Salsa - Mild, 1/4 cup
    Salt, 1 tsp
    Garlic, 1 clove

Directions

Cook rice according to package directions. Drain and rinse black beans.

Coat a stirfry pan with nonfat cooking spray. Add scallions and garlic, cooking until tender. Add black beans and salsa, mixing well. Remove from heat and add rice, stiring well. Add salt for taste.

Makes 8 servings. Goes well with Chicken Burritos.
