Ingredients

6 Ronzoni Healthy Harvest Whole Wheat Blend lasagna noodles
1 lrg jar (1 lb, 7oz) Prego Heart Smart Traditional spaghetti sauce
1 small can of tomato paste
15 oz Ricotta cheese, part skim
1/2 c Parmesean cheese
2 lrg eggs
1 lb ground turkey, 93% lean
1 c (2 cans) mushrooms, pieces and stems
2.5 c mozzarella cheese, 2%
Directions
Preheat oven to 350.
Boil noodles in large pot of water.
Brown ground turkey, drain.
Combine spaghetti sauce and tomato paste, add just enough water to make mixture 3.5 cups. In separate bowl, combine ricotta cheese, parmesean cheese, and eggs. In 13x9 pan, spread 1/2 c of spaghetti sauce mixture on the bottom of the pan. Place your first three noodles on top. Then, spread 1/2 of the ricotta cheese mixture on top of the noodles. On top of the noodles, spread 1 1/2 c of spaghetti sauce mixture. Sprinkle 1/2 of the ground turkey, 1 can of mushrooms and 1 1/4 c mozzarella cheese. Repeat for a second layer.
Cover with aluminum foil and bake for 45 minutes. Remove foil and bake for another 15.
Makes 12 servings. Freezes well.
