Introduction
Once again had fresh spinach that needed to be used and came up with a great recipe. My kids love spinach artichoke dip so this was a great way to get their veggies in also. Ingredients
-
-3/4 C minced onion (I use white)
-2 cloves fresh garlic, minced or chopped
-1/2 C fat free chicken broth like Fit n Active from Aldi
-1/2 a 10 oz bag of fresh spinach, chopped finely
-260g non marinated artichokes like Progresso's canned (1 whole can), chopped
-4 oz 1/3 less fat cream cheese, cut into cubes
-1/4 c Sargento Limited Edition New York Sharp White Cheddar shredded cheese
-1/4 C Kraft shredded Italian Three cheese
salt and white pepper to taste
Directions
--Cook the onions and garlic in a medium pot over med. heat until onions begin to brown, stirring occasionally. Add a bit of chicken broth and stir. Let simmer a bit while you are chopping the spinach. Add the spinach and the remaining chicken broth. Stir and cook on medium, stirring often to cook the spinach down. Add the chopped artichokes and stir well.
--Turn down the heat to simmer and add the chunks of cream cheese. Stir constantly to melt and smoothe the cream cheese. Add the shredded cheeses, stirring after each one. Add salt and pepper to taste.
--Makes a out 2 3/4 C total or 11 servings of 1/4 C each.
