Introduction
This is a fast simple way to to cook a tasty filling side dish that goes well with chic or beef. This is a fast simple way to to cook a tasty filling side dish that goes well with chic or beef.Number of Servings: 2
Ingredients

1 can diced tomatoes & green chillies (10 oz.)
1/4 cup minute rice white or brown (might have to adjust for value with brown rice)
1 tsp minced garlic
2 green onions (optional)
1 small sliced zuccini
Directions
use med skillet and spray with pam, add garlic, onion, zuccini and brown lightly, add can of diced tomatoes and green chillies, and rice. stir and cover for 5 min, (i have left lid off and stirred while cooking. test rice and serve when tender.
This makes 2 servings but can be added twice for one serving depending on your appitite.
*I have also browned browned and cooked 2 - 4 oz chic breasts with the first step (start the chic, garlic and onion first so it is almost cooked threw then add zuccini) and follow the rest of the recipe. Just add a serving of 4 oz chic breast to meal.
