Great weekend breakfast! Can also use red or green bell pepper and your other favorite veggies! Belinski's All Natural Chicken sausage can be found in the all natural meat section of your supermarket. If you can't find it use another all natural, no preservative, low cal chicken sausage. Ingredients

4 large Eggs
1 Medium Tomato
1/2 Yellow Peppers
1 small onion
1 Tbsp skim milk
1 oz Mozzarella Cheese, park Skim
1.5 links of Bilinski's Chicken Sausage, Cajun Style
Dash of salt
Spray of olive oil
2 tbsp fresh cilantro
Directions
Dice tomato, yellow pepper, onion and chicken sausage. Beat 4 eggs in a separate bowl with milk and set aside.
Spray a pan with with olive oil and set over medium high heat. Saute over medium high heat until onions are tender and sausage starts to brown. Add a dash of salt if desired.
Pour eggs over sautéed vegetables and sausage and turn heat down to medium. Top with fresh cilantro and cook until eggs are done, about 1 minute. Turn off heat and spray with cheese.
Serve with salsa and bread if desired.
