    8c low sodium chicken broth
    1c cooked wild rice
    1 medium chopped onion
    1 serving (approx 10) Bolthouse Farms petite carrots
    2c chopped broccoli
    3c chopped bok choy
    1c fresh chopped mushrooms
    8 oz boneless skinless chicken breast (Tyson's or Thrifty's)
    1c water (to poach chicken)
    1 tsp poultry seasoning
    dash pepper (or to taste)


Cut chicken into 1" cubes and poach in 1 c of water in your covered soup pot (approx 10 minutes) stirring occasionally

While chicken is cooking chop your veggies (onions, broccoli, bok choy & mushrooms, carrots are nice left the serving size)

When chicken is cooked add Chicken Broth, carrots, onions and seasonings and bring to a boil for 5 minutes

Add cooked wild rice, mushrooms and broccoli and boil for 3 minutes

Add bok choy and boil for an extra 2 minutes to just heat thru

Ladle out soup and enjoy...
makes 6 2 cup servings of hearty chicken soup
