Ingredients

Whole Wheat Flour, 1 cup
All-purpose flour, 1 cup
Brown Sugar, 1/2 cup, packed
Baking Powder, 2 1/2 tsp
Cinnamon, ground, 1/2 tsp
Cloves, ground, 1/8 tsp
Salt, 1/2 tsp
Milk, 1%, 1 cup
Egg white, 2 serving
Canola Oil, 1 tbsp
Sweet potato, 1 cup, finely grated
Dried Apples, finely chopped, 1/2 cup
Topping:
1 Tbsp sugar
1 Tbsp cinnamon
Directions
1. Preheat oven to 375. coat 12 muffin cups with cooking spray.
2. Combine whole-wheat flour and next six ingredients (through salt) in a mixing bowl.
3. combine milk, egg whites and oil in a separate bowl. Whisk well.
4. Make a well in the center of dry ingredients. Pour wet ingredients into the well and stir until just combined. Gently fold in sweet potato and apples.
5. Fill muffin cups two-thirds full. Sprinkle with cinnamon-sugar mixture. Bake 18-20 minutes, until centers spring back when touched. Makes 12 muffins.
Using skim milk would reduced the number of calories.
Any type of dried fruit, such as pears or raisins could also be used.
