1 cup fat free milk
¼ cup unsweetened applesauce
2 tablespoons canola oil
½ teaspoon vanilla
2 egg whites or 1 egg
2 cups whole wheat flower
1/3 cup sugar
3 teaspoon baking powder
½ teaspoon salt
1 cup blueberries
2 scoops pf whey & soy protein
Directions
Preparation:
1. – Heat Oven to 400F.
2. – Mix milk, apple sauce, oil, vanilla and egg whites in a bowl with wire whisk. Stir in flour, sugar, baking powder and salt, using spoon, just until flour is moistened (batter will be lumpy).
3. – Stir in Blueberries
4. – Divide evenly batter among muffin cups
5. – Bake 20 to 25 minutes or until golden brown
