Introduction

This recipe is from Madhur Jaffrey's "World Vegetarian" Cookbook and uses chickpea flour for the breading. They're supposed to be deep fried, but I fry them in the pan with a thin layer of oil. Ingredients

    1 head of Cauliflowe
    1 cup Chickpea/Garbanzo bean Flour
    1 tsp salrt
    dash of pepper, to taste
    1 tsp dry thyme
    2 tsp ground cumin
    1 tsp ground coriander seeds
    Cayenne pepper, to taste
    2 egg whites
    6 TBSP Safflower Oil

Directions

1. Break up cauliflower into bite size pieces
2. Mix batter from chickpea flour and all spices, add enough water to make it a smooth batter of medium thickness (about a cup)
3. Beat egg whites to soft peaks and blend into batter
4. Heat oil in small batches, as needed, on medium heat
5. Dip cauliflower and fry on all sides for 5-8 minutes, until golden reddish
6. Place on paper towel and eat immediately.

Only make as much as you will eat, then make more as needed, fresh, They are just much better hot than cold.

I'd love any suggestions for how to make these baked - maybe put some of the oil right into the batter?
