Ingredients

    1/4 cup brown rice
    1/4 cup diced roast beef -seasoned to taste
    1 cup raw baby carrots, diced in food processor
    2 large stalks celery, diced fine
    3 cups potato, diced, with skin, cooked and spiced
    6 large mushrooms, diced fine
    1 cup chicken broth-fat free
    assorted spices to taste

Directions

Cook roast beef in microwave till done (about 30 minutes if not frozen), spice to taste. cube potatos, spice and microwave till done. (about 10-15 minutes) While those cook, put 1 cup broth and 1 cup water in large pot, add rice and cook till boil. lower to simmer and let simmer. Add very small cubed beef and celery and carrots, continue to simmer. put the potato in a food processor and dice very fine add to soup. mix well. add more water as needed. IN last 5 minutes or so of simmer, add mushrooms. stir in well. simmer and then let sit or serve.
