    2 lb lean ground beef 96/4
    2 egg whites
    1/2 cup grated carrots
    8 mushrooms diced
    3 gloves garlic minced
    1 small onion diced
    1/4 Progresso Italian bread crumbs
    2 tsp Worsteshire Sauce
    Salt & Pepper to taste


Pre heat oven to 350. Mix all ingredients in a bowl
till blended. Spray a 13x9 baking dish with fat free
cooking spray, form meat into a loaf and cook for
1 hour @ 350 degrees

makes 12 slices

    I am making this meal right now but I think there was a little typo. It asked for a 13X9 baking dish but I think it should be 9X5 baking dish...there is not enough to fill a 13X9 dish. I made a few changes also...I sauted the onion and garlic first and I added crushed red pepper.

    This meat loaf is wonderful! I made it the other night for dinner and my husband had seconds and wanted it put in his lunch for the next day. I have to say though the only down fall is that it is sooo good that its really hard to only have one single serving piece. - 3/29/12

    What a great low carb. recipe. My wife just found out she needed a low carb. diet, and this kind of recipe will make it painless for her. - 3/20/18
