Introduction

Number of Servings: 12

Ingredients

    1 1/4 c. whole wheat flour
    1/2 c. Splenda
    1/2 tsp. salt
    1 tbsp. baking powder
    2 c. Kellogg's All Bran with Extra Fiber
    1 1/4 c. Silk Soymilk Plus Fiber
    1/4 c. Egg Beaters
    1/4 c. unsweetened applesauce

Directions

Stir together flour, Splenda, salt, and baking powder, set aside.

In large mixing bowl combine cereal and soymilk. Let stand five minutes or until cereal softens. Add Egg Beaters and applesauce; mix well. Add Flour mixture, stirring only until combined. Portion batter evenly into 12 lightly greased muffin pan cupas. Bake at 400 degrees fro 20 minutes or until golden brown. Makes 12 muffins.

    Made this morning with raisins added and will use the recipe again but will add cinnamon as well. The muffins were smaller than I expected and just a little on the dry side. - 12/31/07

    Incredible!
    I simply loved these they freeze well too. But I can't keep them around long enough to freeze them unless I make two batches excellent recipie - 11/21/07
