Introduction
I created this recipe tonight because I really enjoy the veggie tacos at Islands. These were really good! I enjoyed the pepper jack cheese but could do without to save calories.Trader Joe's makes redi-made shells that have the same calorie value as soft shells. Ingredients

1 red pepper - thinly sliced
5-6 oz of crimini mushrooms - sliced
1 zucchini or mexican squash - julienned cut
5 green onions - chopped
1 tsp chipotle
1 tsp chili powder
1/2 can black beans
1/3 can corn
1/4 cup cilantro - chopped
Salt and pepper
Pepper jack cheese (or cheddar)
Salsa - fresh
Directions
Makes about 10 tacos - calorie count is based on a hearthy helping (3 tacos).
- Saute peppers in olive oil for about 5 minutes.
- Add mushrooms and continue saute for 3 minutes.
- Add chipolte and chili powder
- Add squash and cook 3 more minutes.
- Add corn and beans and heat through.
- Add cilantro and turn off stove top.
- Salt and pepper to taste
Warm redi-made shells in oven for 2-3 minutes or per instructions.
Assembly tacos...we put the cheese in the bottom and then the hot veggies and top with salsa.
